Did I introduce you to my icebox cake?
I know I briefly mentioned this newly discovered wonder the other day, but I don’t believe I formally introduced you.
Icebox cake is as simple as this: Put chocolate wafer cookies on a platter, top with whipped cream, repeat 10 times, refrigerate overnight, slice, eat.
I’m in heaven: a no-bake, make-ahead cake that I can serve as formally or informally as I please.
I added a little peppermint extract to my whipped cream.
I’m glad I did.
I’ll be experimenting with some other combos in the near future, I’ll let you know if it turns out well.
I’m hoping for some cheaper cookies, to be honest.
In the meantime, make this tonight and eat it tomorrow.
Because I said so, that’s why.
