I have this problem.
I used to be able to read recipes, soak in the information, and say to myself “I’ll make that someday.” Then I would promptly forget about it and life would go on.
This is no longer so. I blame the baby.
The thing is, little Evelyn, albeit that she is still in utero and not capable of speech right now, has this way of making me do things. She also has a thing about food. She wants it all the time.
Unfortunately, she is discriminatory when it comes to food. She only likes things that use large quantities of flour, sugar, and butter and that require her poor mama to spend way too much time on her feet. Then, after her poor mama consumes said food, she changes her mind, decides that isn’t what she wanted and then I spend the evening clutching my belly and wishing I never had to eat again. I also have to ask for foot rubs afterwards because my kitchen floor and my swollen feet are not friends. My kitchen floor actually hates me, I can tell.
And then it starts all over again.
Right now Evelyn really wants me to make PW’s Cinnamon Baked French Toast. She has been asking for it for 11 days in a row now, and I’m afraid that because tomorrow is Saturday morning that I may just have to oblige her soon. The only problem is that on Wednesday, she talked me into making PW’s Cinnamon Rolls. I only got as far as finishing the dough before my feet gave out on me and I ended up in bed asking for a foot rub. That means that my feet and I are going to have to spend this afternoon back in the kitchen rolling out dough and shaping it into heaven. I mean rolls. Rolls may or may not equal heaven. Evelyn was just there, and she seems to think they are roughly equivalent.
And don’t even get me started on Smitten Kitchen’s Braided Lemon Bread or her Rustic Rhubarb Tarts. I’ve been dreaming about rhubarb six nights in a row here! People should realize that there are people like Evelyn out there that have no self-control at all.
Oh, and by the way, I’m pretty sure that it is Evelyn who is making me read all these blog posts and see all these recipes. She is very controlling.
Before I head off to the kitchen, however, I really should share something with you. Something amazing. Something with a large quantities of flour, sugar, and butter.
You see, I think I figured out where Evelyn got her aforementioned cravings and powers of persuasion. They came from her father.
Steve wanted some chocolate chip cookies on Wednesday. I could tell by looking at the back of his head while he was studying for a Russian politics test. We are in a close enough relationship that I can sense these things by looking at the back of his head. And because I knew he wanted them, I had to make them.
So I did.
And Evelyn really likes them. I hope you do too!
Chocolate Chip Cookies a la Evelyn’s Mom
- 2 cups brown sugar
- 2 cups white sugar
- 1 lb butter
- 4 eggs
- 2 tbs vanilla
- 6 cups flour
- 2 tsp baking powder
- 2 tsp baking soda
- 24 oz chocolate chips
Cream together your butter and sugars until fluffy. Add eggs and vanilla and combine. When a recipe calls for a tsp of vanilla, I usually use a tablespoon instead. Vanilla is good for you.
Whisk together the flour, baking powder, and baking soda. Add this to the wet ingredients a cup at a time mixing on slow until just combined. Add chocolate chips and thoroughly incorporate them into your dough. This recipe is just slightly too large for my KitchenAid mixer. I use it up until the chocolate chips are to be mixed in, and then I throw everything in a big bowl and mix with my hands. I also prefer milk chocolate chips over semi-sweet, but use whatever your heart desires.
Using a tablespoon, scoop out cookies onto an ungreased sheet and bake at 350° for 10-12 minutes. You want them to look totally undercooked but have the slightest hint of gold. When they’ve sat for 2 minutes on the sheet they will be perfect.
I want to meet Evelyn!! Even though she may be demanding!

You can’t blame Evelyn, she has no teeth. I think you had these urges before she was ever conceived. Now Steve, he’s another problem. You can blame him. LOL
