I finally got my camera back! Sorry these pictures are an entire week late, but I promise- the cake was worth waiting for.
We actually started my birthday with the amazing Stuffed French toast recipe that Amanda from I am Baker posted on Tasty Kitchen.
It turns out I was going to have an I am Baker birthday/ Mother’s Day because Steve made her amazing Rainbow Cake. Its not that Steve reads blogs, he just pays attention when I show him cool posts.
Anyhow, he started by mixing 1-2-3-4 white cake batter with different fruits: Strawberry, Orange, Lemon, Kiwi, Blueberry, and Grape. He added a little food color to each layer, as well.
Each cake was then baked in separate pans- they looked so pretty!
He then stacked them. The lower layers had a simple syrup between them, like Amanda recommended in her recipe. Between the green and yellow and between the orange and yellow, we instead spread some leftover lemon curd, and between the red and orange we spread some homemade strawberry freezer jam. Then Steve frosted the whole cake with whipped cream and decorated it with fruit.
My mom and Grandma and aunt patiently shared their holiday and their cake with me and let me blow out the candles. My cousin was upset that I didn’t wait for him to help, though.
If you look above, though, you’ll see that he had already tried the frosting on the cake by this point, so don’t feel too bad for him.
So pretty!
My grandparents brought Neopolitan ice cream, which seemed particularly appropriate, but my dad knew I only wanted the Strawberry, so he oblidged.
A special thank you to Amanda for sharing this fun recipe, and more especially to Steve for making this beautiful cake and for making my birthday/Mother’s day such a sweet celebration and special day!
Oh. My. Word. I love it!! He did SUCH a fantastic job… I like his better then mine! LOVE those strawberry hearts around the edge… and the rainbow is just beautiful!!

That certainly IS an awesome cake! I’m in a birthday dry spell until July, so maybe I’ll bust it out for the Memorial Day weekend.
Off to buy more cake pans.
The cake looks so tasty! The colors are a fun idea.
Oh it’s beautiful!!! Good job Steve. I’m not sure I would have been patient enough to cook 6 different cake layers, but that looks yummy. I haven’t ever seen this done with actual fruit added to the batter either. I bet that makes it yummier. Could you tell the difference in the flavors between the layers? Anyways love you guys!
I love the fruit on top. Very beautiful.

I made a similar cake that I found on The Whisk Kid’s blog – I love the gorgeous fruit you used!
I will definitely make this again.
I want some!
Lovely cake — a pleasure to look at (and I’m sure, a pleasure to taste). My only experiment with adding food color to a cake did not work well. What was supposed to be blue ended up looking like dryer lint. Too awful looking to frost.

I’m not gonna lie and say I’m going to make that cake now, because I don’t have the patience to make something like that- but it looks absolutely amazing. The ice cream is a nice final touch, and I definitely agree with your choice of strawberry.
